Reason 500 why we love Fall at our house.....PEACHES. We can't get enough of the them. We have been eating them every morning, after noon and evening since Saturday. We have an ENTIRE box from Brigham City sitting in our garage, and we are lovin them! Last month Better Homes and Garden did the coolest article. They had 50 ways to use a peach, the recipes were quick and easy, and only required a few ingredients. Maybe one day when I am really bored I will do the entire 50 recipes on my food blog. But, I tried one tonight. Single serving peach crisp. I had this plan in my head. First, go to swimming, get my laps in, then....come home and make myself this little treat. I couldn't focus at swimming, my mouth was watering the entire time, I just wanted to come home and cook! It was so easy, and yes, I will be adding this to my food blog. But, it was so great, I had to share it on my blog since not everyone reads my food blog. Here's the ingredients and recipe for a single serving peach crisp:

Remove sking from peaches, slice peach in half and remove core
Blend a little brown sugar, butter and instant oatmeal.
Top your peaches with the crumb. I sprinkled a little bit of cinnamon on it too....hello, how could this be a crisp without cinnamon? Bake at 375 until the top is brown and bubbly. Enjoy....it's heaven!!!
PS....tommorow I am making a trip to the grocery store for some frozen lowfat vanilla yogurt, I'm making another batch tommorow night!! I think I may indulge a little more with some vanilla yogurt on top, yum!
